well then YOU NEED TO ADD PECTIN OR IT WON'T SET. That's why I said to use jam sugar, it has pectin in it, makes it much easier. You can fanny about with lemon juice and apples if you like but it won't be as jammy.

Why ask at all if you're just going to argue about the methods people suggest, and make a point of not following them? Why not just chuck it all in a big pan and go "woo yeah crazy I'm a renegade ahah no recipe for me wooo yeah I'm so wacky" and see what happens?

I was just asking how to make jam and I'm too lazy/tight to just go to the shop for pectin. Just one little thing.

I'm hardly making renegade jam.

I'm not sure I have poo pooed anything else have I? All you have suggested as far as I can see as a recipe on this thread is mixing sugar and berries (and pectin of course).
 
Well use your caster sugar recipe and google for something that suits you next time. Good luck (you'll need it).

The internet said I could just add some unripe berries to the mix (so back to the shed roof I guess). Mind you it also said soft berries would be alright without pectin. Now I don't know what to do. I do know I'm not going to the shops just to make a handful of jam.

I don't have lemon juice or apples.

FFS! If you don't have unripe fruit, jam sugar, pectin, lemon juice or apples, you can't make jam.

No need to be a grouch, I was asking for advice from U75 because I find it generally really useful. I'm not sure I deserve a slap in the the face for not following every word of advice I read on U75 to the letter just because I have asked for it.
 
If you haven't got a source of pectin, you just end up with a coulis type thing which'll still be pretty nice with icecream.

Well I can pick some more unripe berries. There are plenty in my garden over my shed roof (I don't think I made that clear in my last post).

oh right! go and do that then :) You might need quite a few, brambles are notorious for being difficult to get to set when you make jam or jelly with them.

You're absolutely right, offering advice to people who have no intention of following it is a fine way to spend my Saturday. My time isn't worth much anyway. Please accept my sincerest apologies. And make a crumble.

Advice.

I asked for advice not rules that must be obeyed. You told me to mix sugar with berries and add pectin. Not exactly a recipe.
I am however following your advice on quantities. I love recipes where you just measure weights against other ingredients. That appeals.

I'm not sure what other advice of yours (and other people) I am not following? Maybe I should have called this thread. "How can I make Jam without going to the shops and buying pectin, PS I don't have apples or lemon"

I just wanted to make some lazy saturday jam and now I am the colin hunt of the kitchen.

The whole thing is becoming really rather depressing. I was hoping jam would make me happy.

Which might not be as fundamental as all that because it is in the fruit? I saw a thread about making cake without eggs. Nobody gave them such a hard time.

Nah, to be honest you just sound like you want to make jam with what you already have, which is fine. It just might not turn out great as people have said :)
I still think calling it renegade jam would be cool, you could make labels :D
 
Done.

First thing I noticed as I started to prepare it was that I only have three small jars. Then I noticed I had hardly any sugar.
Uh oh.
Well that's not too bad because I couldn't really find that many red berries.
I weighed out the sugar to what berries I did have and ploughed ahead.
Amazingly it made just enough to fill my three small jars perfectly.

So how did it turn out? Looks pretty damn jammy actually but it's still too hot to hold. I have already put the lids on but should I have waited for it to cool first?

It's very sweet. I think next time I won't put in as much sugar.

I'm not going to mix it with chocolate.
 
Well it's cooled down now and it is most definitely 100% jam and the runny sludge or the doubters expected.

I have bought more sugar now so I'm going to make some sort of cheesecake with the rest or a creamy pie. Not quite sure how to do this yet.
