they appear to have no problems in brittany making it, have they got special gifts concerning pancake batter?

Buckwheat bread would just be a big solid lump.

You can make a sourdough (only tried this the once with these ingredients but it was quite tasty) using rice or potato flour and rye or oat flour. in thirds. It's still dense, but no worse than a good rye bread.

I do wish I wrote my "culinary experiments" down more often. :(

Not special gifts, but it does take a lot of practice and skill.
I have tried replicating some of the seemingly simple things I have seen Breton cooks do, my only real success thus far has been Iles Flottantes.
