Ahh the joys of the Mac Mini eh? :D
I have a Mac Mini.

Currently I have Safari (6 tabs), Safari again (3 tabs), Microsoft Messenger, iTunes, iPhoto, iMovie, Thunderbird, and NeoOffice, as well as Dashboard with about 12 widgets running.

I would never have managed that on my old XP PC.

:p

On one machine:

EditPlus (8 tabs)
Explorer (not IE, just the normal file manager)
Opera (14 tabs)
Outlook
Google deskbar
Semagic (a Livejournal client)

On the server, where I actually do real work (I've got a switch and a WinTerm):

Cygwin
Calculator
Word x2
Excel x2
SAS plus its help

oh, and on the Powerbook, this:

would be typical - in fact quite restrained.

Outlook
word
excell (8 spreadsheets)
Sage
Internet Explorer (4 pages)
Barclays Ledger Master
remote desktop connection (5 servers)
Putty (2 sessions)
cute ftp

I love Bill Gates!

Lotus Notes
.Net Visual studio
Sql Enterprise Manager x3
Word
Explorer
Query Analyser x2
Messenger
IE x3
Excel x2
Analysis Services Manager

cmd x6 (2 remote and one is really active perl)
3 putty (2 ssh, 1 pop3)
VNC X1
VMware x3
Firefox (lots and lots of tabs in three windows)
Wordpad (has the manual for Blat open in it)
winRAR (has Blat.zip open)
explorer (6 windows, 2 remote)
UltraEdit (8 tabs)
Outlook (with four little meeting requests) :o
Sametime
Windows Task Manger
NTfileMON
regMON
WinHEX
CygWin
Kmail
SBAdmin

Not all those are the main desk top cause all the Office type stuff, Outlook, Sametime, Firefox (this one at least) are stuffed into a Virtual Machine as is the monitoring I'm doing of the behaviour of another VM while test my program on it. All on one computer though.

windows explorer
windows explorer
mail reader
winamp
card game called solo
Microsoft activesync
notepad
memory map
irfanview
firefox 13 windows, possibly some tabbed
quattro pro
router syslog app
command prompt
wireless network chooser (been having internetty problems)
Autocad
notepad
nokia phone browser
acrobat

OK, I'm at work so working on a windows box and three Linux boxes (two in the office and one at home):

On the windows box I have:
Opera (~60 tabs)
8 PuTTY sessions
3 gVim windows
Two Access DB's (ugh)
Adobe Acrobat
Eudora
Two IM sessions
Seven explorer windows
An image in GIMP I've not closed yet

Remotely, I have three Postgres terminals open, a batch job of Ghostscript running, an MPEG4 -> DVD transcode running and another Opera session running from my home box via a Windows X server, since my PG SQL server can only be accessed from my home LAN.

I reckon you could do twice that on a PC costing the same as your mini. :D :p

Camino, Safari, Preview, iChat, MSN Messenger, Conversation, VPNClient, iTunes, iPhoto, iCal, Quicktime, TextEdit, Microsoft Word, Excel and Powerpoint, System Preferences, iDVD and Photoshop.

18. I'm going to quit about half of them now...

edit: Just popped up Entourage to check email too. 19 for now, but will go down.
