Is 're-cooking' (ie fried rice, those risotto balls - which are also fried) different to 're-heating'
Because I've always re-cooked rice - if its been kept in a fridge, for maybe 2-3 days at the absolute most. Usually frying, but sometimes steaming as well. And in small quantities, one or two portions, as I suppose its more likely to be thoroughly cooked.
But I agree that just bringing cold (or room temperature
) rice up to eating temperature would be a very very bad idea.
If you're worried you could freeze half of it (in portions) for later in the week.
