How long after a bottle of wine is opened should I use it for cooking?

It won't kill you, but it'll be past its best in taste, and it could well give you a nasty stomach upset. (White does go off quicker, though, as xenon says).

One of my happiest days was going for a day trip to Bellingham, and finding a bottle of Thunderbird. Great stuff.

We drank it before we came back across the border. Yes, we were driving. I hope everybody doesn't hate me now.:(

Not so IME. Even with the stopper in. But then I prefer red.

Not sure if anyone has said this but anyhoo, my missus has a good trick.She freezes old wine into icecubes ready for cooking.
