I would definitely not consider wu tang as Gangster rap, but then it seems anything that isnt soft is being lumped in as gangster rap.

Actually, my favourite HoP song is a Butch Vig remix of Shamrocks and Shenanigans. It's very guitar-rap type sound but really good.

Indeed they can, but when I think of Gangsta Rap, I think of West Coast, Bouncing cars in vids, bloods and crips, bandanas, flannel shirts, keyboard riffs etc etc.

Then the Dirty South took it up a notch with the keyboard riffs, gun shot soundbites, super catchy hooks and came up with da Crunk.
