High olive oil proportion recipes needed!

stuffed vine leaves

use cabbage or similar large leaf brassica ;)
make risotto as per risotto rice packet instructions but to a marginally thicker consistency than normal and leave to cool, add further herbs and seasoning to taste and add special olive oil
peel the cabbage leaves off the cabbage so theyre whole and cook them in salty water
wrap spoonfuls of cold risotto in cabbage leaves
eat cold
 
anything with olive oil packed tins of tuna. i can't stand normal tinned tuna, but the kind packed in olive oil (not sunflower oil!), especially the imported italian stuff from the italian deli, is absolutely gorgeous.

my favourites - tuna salad nicoise & linguine with italian tuna and cherry tomatoes (i make this at least once a week, have gotten my tuna-abhorring family addicted as well!) don't know the policy on reprinting recipes from a cookbook on the web but pm for recipe if you're interested.

fortunately for me, the bf goes to italy frequently and brings loads back with him as it's kind of pricy here, but the supermarket own brand is usually OK.

i eat it plain for lunch, too. mmmmm...
