I love gmail.
What's all this about folders? If you set up filters so that you apply a label to something and send it straight to archive it acts like a folder. Loads of flexibility.
My one current beef is that I do get some spam in my inbox and some of my mail goes in the junk (weirdly even the labelled stuff). Not a problem though as nothing I'm involved in is ever time critical and I check the junk every now and then. I don't expect it to be perfect. I think my spam situation is worse than everyone else I know because I send all my whatever@mydomain to gmail. I can check it on my phone (old tariff with free wap).
Pretty sure you can get some alerting thing which lets you know if you've got mail without having your browser open. I can't be bothered with that though as if the computer is on the browser is open.
I like the googlechat thing as well except my mate blocked me (as an experiment...) and can't seem to unblock me as I'm not technically under a google address.
