Give me something exciting to do with spinach

Quick Saag recipe

2 bunches spinach
1 onion chopped
2 green chiles
1 carrot
2 tomatoes
1 small eggplant
6 garlic cloves
1 2 inch piece ginger
1 medium potato
a small bunch dill leaves
1 small bunch fenugreek leaves
salt
1/2 teaspoon coriander powder
1/4 teaspoon paprika
2 tablespoons yellow gram lentils -- washed, opt

Wash spinach leaves, dill and fenugreek well in running water. Roughly chop all the veggies. Literally throw everything in a pressure cooker including the seasonings and herbs, add enough water and cook for 25 minutes.

When cool, open the cooker and enjoy the fragrance of a medley of delicious vegetables, but don't eat it yet. The last step: blend the cooked dish till it gets the consistency of a wet chutney. Good with boiled white rice or fresh naan. :)
 
For a good side dish roast some red onions and cherry tomatoes, to the point where they are starting to char and the tomatoes are breaking down. Cook some spinach, then drain it very thoroughly. Mix together the spinach, tomatoes and onions and heat them together. This goes particularly well with a nice steak, or things like duck or venison.
 
500 gr spinach
2 tbsp oil
1 onion chopped
1 tomato chopped
1/2 tsp nutmeg, grated
4 tbsp stock, or water
Pepper

Boil the spinach for 5 minutes, drain. Squeeze the spinach with your hands. Then chop it on a cutting board.

Saute the onion in a medium sized pot with olive oil and salt until the colour of the onions turn to light brown. Add the spinach, tomatoes, nutmeg, stock and pepper. Cook for about 5 minutes over medium-low heat. Turn the heat off.

Make sauce from 100 ml yogurt, clove garlic, pour on top. 1 tsp crushed chilli fried in oil. Pour right on top.
 
When I lived in France I had tarte aux epinards, sort of like a Spinach pie. I dont know how to make it though but I'm sure you can google a recipe.
 
You could boil it, then spread it all over your arm. Then pretend to have gangrene to all your flatmates.
 
Proper large scale US style spinach salad, with as much of the leaf as you can chomp your way through, dressed in a mustardy vinaigrette, with loads and loads of bacon bits, sliced raw mushrooms, proper croutons and ideally a few cubes of avocado in as well. It's a meal.
 
Raw with a hot anchovy sauce tipped over. That's anchovies fried in olive oil with crushed garlic and a bit of ground pepper, fry till its just a goo and the fishes have totally dissolved.
