Nowt wrong with quiche but if you're really bothered make a fritata with artichokes and saffron etc to make it sound better.

Tabouleh wins - very tasty and stays fresh for 24 hours so can be made in advance.

In mitigation your honour, I did provide a number of veggie options, along with with more 'exciting' veggie choices like metagee and mango sour in a latter post. I'd still rather have a curry chicken than curry pumpkin any day tho.
 
True, and I did look up metagee 'cos I'd never heard of it. The recipe I saw had ox tail and salt fish in it, but I'm sure veggie recipes exist and it's looks pretty good.

Wrong on the curry though :)
 
To be fair, there's rarely a caribbean dish, particularly any Portuguese influenced one, that doesn't have a bit of animal in it.

Veggie metagees tend to substitute a little casareep instead of the mixed meat ime. In general, if you're veggie, Guyanase and Trini cooking's probably a little more friendly to you, if only for the larger Asian populations.
