Espresso pots

You're supposed to stir it before plunging - that's what it says on the cafetiere anyway.

Never had a problem with it myself - in an ordinary sized mug, the muck sinks to the bottom and unless you go out of way to drink every last bit, it's left at the end. Maybe the seal between glass and the gauze isn't very good on yours?

Go for it like buggery. Change stirring direction halfway through, also. This probably doesn't much help, but is satisfying.
 
You're right, there is something strangely satifying about changing sitrring direction. Why exactly is that?
 
Something to do with the extra resistance of the water, and the little whirlpool that forms in the middle. (at least, for me)

Related note: I remember some thing on Radio 4 where they were talking about stirring tea, and why the sound of the spoon against the cup always increased in pitch as you stirred faster. They concluded that stirring faster caused the liquid to rise up the sides of the cup, thus affecting the way in which it vibrates and therefore the pitch.
