Easter Cooking

We're having this tomorrow, overkill on the garlic/rosemary/lemon juice but it's so good, not sure what the veg will be, probably something rooty!!

tonight it's Pizza!!

Garlic Rosemary Lamb Chops
Lamb chops
1 tsp grated lemon peel
3 garlic cloves, minced and mashed to a paste adding 1/2 tsp salt
2-3 Tbsp Rosemary Olive Oil
Pepper to taste

Preheat the broiler. In a small bowl, stir together the lemon rind, garlic paste, rosemary olive oil and pepper to taste. Rub the Lamb Chops with the marinade mixture, place them on a plate and let them marinate for 20 minutes.
Place the Lamb Chops on the rack of a broiler pan about 4 inches from the heat and broil for 4-5 minutes on each side for medium-rare meat.

Rosemary Garlic Potatoes

INGREDIENTS:

2lbs. Small new potatoes, sliced
1/4 C. fresh rosemary, chopped
3 t. minced garlic
1/4 C. olive oil
2 T. lemon juice
Salt to taste
½ tsp. freshly ground black pepper
PREPARATION:

Heat oil in your skillet and sauté the garlic, rosemary and lemon juice for 3 minutes. Remove from heat and put your potatoes in a greased baking dish. Pour the oil mixture over the potatoes, sprinkle with salt and pepper. Bake at 350 degrees for 40 minutes and the potatoes are tender.
 
I made a cottage pie instead, but I didn't have any soya mince so I used a broken up meat-free burger :)

It was still nice, though not too eastery...

I think this is a first year of living away from home lesson - food shopping is always made harder by public holidays :o

Yeah I never manage to get food either. I got a tenner sub today meaning to spend it on nice things to eat, but because of all the public holidayness on the go, not to mention me working til 6, nowhere was open so a fiver went in the frutie and the other fiver went on cider :(

I'll never learn.

I have got lots of pancake mix I never used from pancake day though, so that might be tomorrow's brekkie with some golden syrup :D
 
Was about to start a new thread but this came up from many years ago.

So, are people cooking anything special tomorrow or will it be a kebab?

We're having roast guinea fowl and the first roast spuds since Christmas.
 
I am visiting my dad and his wife. No idea what’s being cooked but perhaps it will be some sort of bland terrible roast dinner. Perhaps lamb which is also smelly.

My Mum cooked bland roast dinners too and now Dad’s second wife does so perhaps they’re catering to his taste. I pity anyone who has to eat a roast cooked like that each week. I am sure they can be nice but I’ve never known them to be!

I'm doing roast chicken for those that eat meat and some crimes against vegetables. Flavour is overrated. Might do simnel cake and custard for pud.
 
Am i supposed to be eating something special this weekend? :hmm:

Debated doing some batch cooking today but don't have the energy for it, so got the last of the spicy sausage bean stew thing out the freezer but probably won't be defrosted for when i want to eat. So very likely a takeaway curry :o
 
We're forced to go and eat domino's at SOs uncles house with BIL and family plus MIL and FIL. The entire conversation will be about people's recent holidays. We havent been on one in years. We will end up switching between youngest and the rest of them playing games and then end up both with him as they drink more then eventually getting out early.

Neither of us want to eat that early anyway but then end up eating it regardless so are splitting one. Half a day gone and money on food we don't want. Happy Easter!
 
I'm making a roast chicken, two types of stuffing, roast potatoes, parsnips and onions and all the veg for 10 of us. I'm making the Yorkshire puddings now because I'm not use to this oven and so I need time in case it goes wrong.

My sister is bringing pudding. 👍

Then chocolate.
 
Leg of lamb here with a herby crust, possibly, or with lots of herbs stuffed around it!

Roast spuds, carrots, peas, cheesy leeks (with stilton) and stuffing.

Custard tart for afters

I'm also making some hot cross buns (mainly in the breadmaker)

Really?? I never knew that :confused: Didn't happen in our house. I've never heard of it. But now you've gone and made me want roast lamb :mad: If morrison's IS open, you can bet all the lamb's gone :(

Nah that's not correct, it's traditionally supposed to be roast lamb on Maundy Thursday, due to that's when the Last Supper was.

It's just moved to the Sunday in more recent times, as not many people have time to do a roast dinner on a workday.
 
I was voted down on the roast so we are having Mexican food. I will make:

Chicken tinga for the meateaters
Fish for the pescatarian + fish taco sauce
Something with palm hearts for the veggie (me)
Guacamole
Pico de gallo
Fried plantain
Refritos
Tacos

All by my gnarled old hands including the tacos, except for the fish, which will be Captain Birdseye's job. Stupid idea doing a poll, should be a dictatorship really.
 
It’s quite a busy weekend for me, and I knew I’d be too knackered and short of time on Sunday evening to do any cooking, so I ordered a delivery from a posh local butcher called Farmison. We’re having half a lamb shoulder shawarma and some chicken shmaltz potatoes. Gonna chuck some tenderstem broccoli in the tin to roast alongside the spuds.
No pudding tho. CBA and I’m also supposed to cutting down on that shit.
 
I’m doing chicken, nut roast, roast root veg and spuds, griddled psb and spring greens, leeks in cheese sauce
Rhubarb crumble and local ice cream for pudding
I wish I’d stuck with plan A which is lamb at Easter, and I love, but now got these chickens defrosting so chicken it is.
I love Easter Sunday lunch more than Christmas
 
All these meals sound really nice

The dinner I have tomorrow will be dictated by a man who likes bland food and won’t eat cheese or tomato, a woman who won’t eat fish, and no doubt a number of children who are probably fussy one way or another

I’ve only ever eaten (over) boiled carrots and cabbage with a roast cooked by family

Lidl and Aldi were completely wiped out of cheap veg and sides of salmon, so I ended up going to the big Sainsbury's.

Got a big bit of salmon fillet, asparagus (on Aldi price match), green beans, carrots, I did manage to get some King Edward spuds at Lidl which pleased me as it's a well known fact that I'm a bit of a potato snob and I like King Edwards best for roasting by a long way. I've also already got stuffing in and have the makings for Yorkshire puds if I feel up to it (I am feeling a lot better now though).

Oh and we're having ours on Monday as N is working Sunday night so will need a quick tea on Sunday, he's off on his regular Monday and Tuesday nights off though so that's when we'll do it.

We don’t do owt as a family. We got an Easter egg each on the Sunday morning when I was a kid, but it was a normal day otherwise. When I grew up and moved away, I never went home at Easter. It was a Bank Holiday with four days off, so that usually meant 4 days of hedonism at raves and after parties

It was fairly important in my family growing up - it's one of those festivals where it can be really quite pagan style welcoming the spring type thing (neo-pagan Ostara).
I mean the long tradition of eggs being involved has absolutely nothing to do with Christianity, it's one of those festivals that isn't wholly linked to the church so can have a wider appeal than simply being a religious aspect.

I do think festivals always have been and always will be an important part of human existence - whether it's celebrating the arrival of new growth, a yearly carnival with music and dancing, or just an occasion to enjoy some chocolate and some kid's films on telly, it doesn't need to be anything deeper than that. Most of us relish a bit of a break from the norm.

(Valentine's Day can get to fuck however)
