    I love East Asian food and have set myself a challenge to expand and improve my cooking skills.

    I am a 2nd gen chinese immigrant (dad is from guandong and mum from HK) and grew up eating 'east asian' cuisine.
    Both my folks are chefs, my dad was one for over 40 years before retiring in the early 2000s. He's a beast in the kitchen. I remember him telling us how he was trained in Kowloon and Grimsby's top hotels before settling in Wales.

    Back to cooking...There's nothing better than a jar of Uncle Ben's sweet and sour, mixed with spam.
    You can add some spring onion in there...for that authentic east asian taste.
    It reminds me of all of the magic and the great times of my youth...that my dad after years of cooking can conjure up this dish after a hard day's work. Makes me cry whenever I eat this dish.

    Anyway, enjoy.

    (cooking time 5 mins)

    Ingredients

    1 x Jar of Uncle Ben Sweet and Sour
    1 x can of spam
    1 x ready-made rice (microwaveable)
    1 - spring onion

    Method

    Cut spam into cubes
    Fry for 1 minute to seal in texture
    Mix with Uncles Ben Sweet and Sour until hot
    Add chop spring onion.

    Mix with microwaved rice.

    Eat.
    Cry.

    When I was young and lived in GY my family regularly ate in the local Chinese restaurants. There were two we visited regularly, one on Freeman Street, the other on Hainton Avenue. They were very good. I don't think either is there now.
