CURRY - a whole new world

Fool, how long have you been eating curry, it's taken yuo this long to realise that curry + naan or other bread is better than curry + rice? And this is a revelation to you? Jeeeeesus

Mine ain't. But then I prefer rice, usually. Good rice is one of my very favourite things. The smell of basmati makes me feel that the world is , on balance, good.
 
Can't remember the last time I had rice with a curry. Go to The Punjab and have their misi roti - crispy thin bread with herbs and spices in it. Or have a massive lentil pancake with spicy filling (dosa) with a veggie side dish - a meal in itself.

We did it the other way around eating rice with the majority of meals and occasionally bread. That's probably because my dad did the asian cooking and couldn't (be arsed) to make chapatis.

Mrs Spy however comes from a family of mainly girls and since we've been together I've barely seen rice except for as you say, at family gatherings and parties.

Making shapely breads quickly is quite an art and the girls in our family (and one or two of the lads) have scores according to their R.P.M. (Roti Per Minute) :D .

Actually paratha are not shallow fried, that's probably where you're going wrong.

They are cooked on a hot dry tava in the same way as a roti/chapati but are prepared by folding layers of butter into the dough prior to cooking, hence the flaky texture and greater unctiouness. Delicious, but not too healthy. I'm only allowed two/month :(.

ETA> You can buy frozen, ready made parathas at Indian supermarkets. You just sling them on a tava or frying pan for 2 or 3 minutes. They're excellent.
 
rusholme is generally shit (i live there). the best place for a curry in manchester is the nawab in levenshulme or shimla pinks off deansgate.
 
Agree with Spymaster on the parathas.

The parathas I've had aren't shallow fried. The trick is to basically get one chapati's worth of dough, roll into a sausage shape and flatten a little. Spread butter or ghee on the top of the flattened sausage, and roll the coil up like a cumberland sausage. Instead of rolling the coil up completely, put the very end of the coil into the middle and squeeze the middle so it's as thick as the rest of the paratha. This process can be repeated if you like. Then shape into a disc and roll out and cook as a normal chapati.
 
Also, in my family we eat mainly rice. We'll have chapatis for breakfast or with dhal, but otherwise it's always rice. We're not from the north of india, so that makes sense.
 
Well, we went to King Cobra, as suggested, and I must say it was one of the nicest curries I've ever had. We had a prawn puri to start (between us) and then I had a lamb handi, and garlic naan, and Madame had a lamb karahi, with peshwari naan, and it was delicious. We noticed that the meat had been chopped really small (no lazy kitchen here) so the sauce gripped each piece like few other curries I've had, and each mouthful was saucy and tender and juicy. It was rather spicy, especially when you're used to a veggie korma like me, but I enjoyed that, and drank two pints of coke to alleviate the heat, and the naan was very fresh.

The free coffees at the end were rank, really bad instant coffee, and we felt obliged to drink them because they were on the house and we didn't want to offend.:rolleyes:

Yer man even said: 'No rice?' with quizzical eyebrows, and we both said: 'NO!' in unison (having re-lived this thread in the car on the way there...)

I didn't miss the rice at all, and it meant I really enjoyed the curry down to the last bite, rather than thinking: 'I'll finish this fucker even if it kills me....!'

So yeah, rice is like, SO September 10th now.

I have been to almost all of the curry places in Rusholme (and quite a few others around Manchester) and its my favorite.
 
Any curry you like but have it with chapattis and use them to scoop up the food instead of a fork. Finish off any liquid with a spoon. No rice is needed with a curry.

I like Naan bread as well but a basic curry with chappattis is the very satisfying. I might just go to my local Indian restaurant tomorrow. It is time I did.

OK. Every recipe I've seen has said shallow-fried :)
But there seem to be loads of different kinds of 'em
