The type of curry has more to do with the style of sauce and spices used , pretty much any curry can be made to be hotter or cooler if you want.

Don't want to be all 'health and safety', but as the sauce will have already been cooked, cooled, stored and then reheated when you order, letting them cool down and reheating isn't ideal. As long as you bring the sauce up to above 65% for a few minutes, it should be fine I think.
The Madras lamb curry was spot-on. I love food with coconut sauce.
