Curries - Would This Work?

Korma has no place on a thread about curry. If you dont like curry have something else, but dont pretend that by having a korma yiou are indulging with the rest of us!

I love really hot curries, and am partial to a well-made korma. there's a brilliant recipe in Madhur Jaffrey's Curry Bible.
 
Well, I did it.I picked up the curries today at 2:00 pm and we ate curry for tea and it was all good. We will have left-overs on Saturday. Great food, no excessive heat and I didn't order side dishes, just garlic naan bread, which was alright.

For those asking why we don't just order for delivery--- only pizza is delivered in Australia.

For those asking why do it this way--- I didn't want to be picking up the curries at 7:30pm when traffic was fierce and parking was competitive. I wanted the exercise to be the most convenient for me... which, after all is the purpose of 'convenience food'.

The Madras lamb curry was spot-on. I love food with coconut sauce. The chicken sindh was ok, the yoghurt and ginger made the dish. all up, I'll try it hotter next time. My wife will keep it 'mild'.
 
Don't want to be all 'health and safety', but as the sauce will have already been cooked, cooled, stored and then reheated when you order, letting them cool down and reheating isn't ideal. As long as you bring the sauce up to above 65% for a few minutes, it should be fine I think.

I agree. You are better off getting a ready meal from the supermarket.

Utter rubbish. A proper Korma is divine.

The very fact that it is featured with an explanation of it's origin in Madhur Jaffrey's Ultimate Curry Bible (which btw, is one of the most awesome cook books ever) backs this up.

Although admittedly, it's a poor relation that most UK Indian's serve up.

That's absolute cock - I like all kinds of Indian food - and I like it as hot as hades when the flavour warrants it but it isn't all hot and a good korma is a wonderful dish. I like what passes for korma from most UK Indian restaurants as well. It's all good!

Sorry but I do tend to get my dander up at that stupid macho attitude! :p
