Crushed new potatoes

My favourite meal in the world is boiled (crushed :p) tatties, tinned sweetcorn and a tiny bit of mayo.

Mmmmm.
 
This is the dressing I'd use with new potatoes. (Not fecking crushed).

1/2 teaspoon sea salt

2 cloves garlic, peeled

1 rounded dessertspoon mustard powder

1 tablespoon balsamic vinegar

1 tablespoon sherry vinegar

5 fl oz (150 ml) extra virgin olive oil

freshly milled black pepper

Crush the salt quite coarsely with a pestle and mortar, and then add the garlic. Ad you crush it and it comes into contact with the salt, it will quickly break down into a puree. Next, add the mustard powder and really work it in, giving it about 20 seconds of circular movements to get it well blended. After that, add some freshly milled black pepper. Now add the vinegars and work these in in the same way. Then add the oil, switch to a small whisk and give everything a really good whisking.

It's from Delia. But her recipe has way too much salt, so I've cut back.
 
When i was a kid, and we used to get new spuds, I used to have a habit of crushing them slightly with my fork before eating them. They seemed more appetising and soaked a little of the butter/juice/liquid which was there.
I'm no culinary expert though, I cant even fry a decent egg.
 
I never got this either. New taties only need a sprinkling of salt and some butter - maybe a bit of freshly picked mint as a garnish but that is all. I eat the ones out of the garden as a meal - boil up a load, serve with butter and a bit salt and just sit there stuffing my face with taties :)
 
Strugglers should buy them tinned. The metal deposits that leak into the water over time give the potatoes a ready-made and unique flavouring. I can eat those unembellished no problem. Don't think I could eat a whole unenhanced baked potato, but small ones I have no problem with.

Whilst I agree that crushing them is slightly impure, even obscene, I'm always up for a bit of potato porn. Yes, it's dirty and shameful corrupting virginal root vegetables in this way - but sometimes I just can't stop myself.
