although I'm not convinced the batter is developing very well

mmm, actually those were the nicest crumpets I've ever eaten

Butter all the way. Crumpets shouldn't be sullied with the likes of peanut butter or marmite or any other such nonsense.

I accidentally put marmite and jam on crumpets once, that was nice too.
