Cube potatos, parboil. Meanwhile start to brown the onion in a nice big frying pan with a bit of oil. Add potatos to pan, brown. Chuck in corn beef, mash it all up, serve with fried egg on top.

Some people like to chuck in a bit of Worcestershire sauce, or mustard.

Don't parboil the potatoes unless you want mush. Just dump them in very hot boiling water in a high heat with the lid on and pull them out again the second they hit a simmer.

I pre-sautee potatoes for a similar dish I do with chicken and bacon but corned beef hash is always going to be a bit mushy cause the corned beef is. You don't even need to chop or dice the meat it will just break up. If the potatoes are too soft it ends up like mashed potato.
 
Is that your best stovie recipe? Any tips? I want to cook this for my mum who claims not to like them when I go to Edinburgh next week.

CBH - par boil the spuds, cube and add to fried onions, brown the lot.
Add the CB and mash up a bit. Add pepper / mustard or Worcester sauce to taste.
Can decorate with tomatoes, beans, grated cheese, or even an egg.
I have been known to use some root mash instead of all plain spuds.

This was something I used to make for my very elderly father, as it was tasty and easy for him to eat.

My MIL used to make a cracking version of stovies ...
 
Not long back from NYC (well Brooklyn) , and diner corned beef hash was awesome , served with home fried spuds as well , plus 2 eggs and 2 rounds of toast.

A veritable food coma. Sets you up for the day all right.

The version I know* is similar to this. Basically boil up some potatoes/onion/whatever else, drain, then mash up with a tin of corned beef.

* I wonder if the recipe varies by area, or if it's random? :hmm:
 
Going for this tonight.

Potatoes cubed, boiled and crisped up. Got some Carrots to use up so they are going in too.

Put some onion and garlic in Hendersons Relish, salt and pepper to soak up over night. Will fry those up with the potatoes and corned beef.

Bit of cheese on top and baked in the oven.

Served with baked beans
