A huge pot of chili con carne (or veggie chili) with rice, garlic bread, sour cream, guacamole, salsa and jalapeno peppers. And salad.

It's embarrassingly easy...


Poach chicken breasts in a bit of chicken stock and lots of white wine till cooked through. Remove chicken and keep it warm while you reduce the sauce and then stir in a block of Boursin till it's completely melted and the sauce is all creamy.

Put chicken on plate.

Pour over sauce.

Voila. :cool:


Takes about 20 mins max so I do it when the roast potatoes are almost done.

Sounds good. Would be nice with some roasted veg too-carrots, peppers, toms etc.

I sometime stuff chicken breasts with boursin or philidelphia and sliced mushrooms. A good slosh of olive oil and some herbs on top, wrap it in foil and bung it in the oven for 35ish minutes. Take the foil off for the last 10 mins to brown the chicken.

A chilli night would be great, bring a dish or ingredient, a big bubbling pot with all the trimmings, eat ourselves into a stupor and then watch the Good The Bad and The Ugly :D

I'll never tempt Brixton people out East though :(

Argh, I'm now hungry so thinking of cooking tea :D

An East London mexican/south american night would win I reckon. We don't have to watch spaghetti westerns afterwards but I bet folks would love to. I'm sitting here drooling about the thought of chilli chill out night :cool:

Can I second the suggestion for banoffi pie - easy to make, can make earlier so not trying to handle that with timings etc whilst cooking/serving/eating dinner and always a winner.

- Or cheesecake if you're afraid of exploding tins

I love cheesecake. Banofee pie is a bit shit though.

I am partial to 3 legs crossed ice cream although it is a little heart attack esq in it's richness.
 
i dont like banoffee pie, so we won't be having that :D i think you should make three legs crossed relahni <licks lips>
