Chorizo - what to do with it?

For precooked sliced chorizo.

Fry garlic in olive oil in a pan. Lots of olive oil. Add baked beans and keep bubbling at a high temperature whilst stirring continuously. When the beans change colour to a lighter orange add chorizo slices. Turn heat down and simmer for as long as you want to.

Add chopped basil and oregano. Simmer for 10 minutes more. Dish out with toast, or rice, or potatoes and a few fresh green leaves. Or, with a diced salad consisting of onion, peppers, cucumber, apple, tomatoes and mint with a bit of lemon juice.

Easy and fucking excellent.

Here in Portugal we eat chourico assado which is the chourico cut almost the whole way through, and speared on a skewer. It is then put onto a chourico cooking thing which is like an ovval dish with bars across, the bottom is filled with about 50ml of high alcohol booze. This is lit and the chourico is heated through. It is great with a beer or two. (If you don't want to waste the booze, and/or don't have the dish thing, bung it under a hot grill till the fat is running and it is heated through)

Don't see it sliced here.
