Head cheese (AmE) or brawn (BrE) is in fact not a cheese, but rather a terrine of meat from the head of a calf or pig (sometimes a sheep or cow). It may also include meat from the feet and heart. It is usually eaten cold or at room temperature as a luncheon meat. It is sometimes also known as souse meat, particularly if pickled with vinegar.

Historically the cleaned (all organs removed) head was simmered to produce a gelatin (formed from the collagen in the bone) containing any incidental meat which came off the head. The more modern method involves adding gelatin to meat, which is then cooked in a mould

Yeah.

I've decided - on reflection - that that was one of the vilest foodstuffs I've tasted in my adult life.

So I've got my vacpot brewing for the coffee jelly in the background; and if Sainsbury's isn't closed by the time the mixture's in the fridge (with cream? Without cream? Dash of vanilla sugar? Or just rocket-fuel-coffee-jelly? :hmm: ) then I'll sod off and get some chicken soup.

I've had one coffee-fudge-win, and one coffee-fudge-lose in the past.

The former was - frankly - dangerous, though. I had to leave a warning note with it in our graduate parlour. Full coffee beans (plenty thereof), plus several shots of espresso. Half a chunk, and I was hardly capable of thought.

However... For tonight... In the absence of sugar and butter and cream (o my)...

In other news, the coffee jelly is looking fucking lush.

There was a smear left on the end of the ice tray, and I had a dabble.

IT's like jellified, gorgeous rocket fuel :D

Has a really beautiful coffee kick to it :D

I reckon it'll work a beaut wi a dab o cream n vanilla sugar :D
