Chicken from frozen

Looby Did you try this? Did you died? :hmm:

Got a whole chicken, frozen. Bought it last week and it had one day left on the BB date and I was away for the weekend, so I froze it. I want it tonight. I'm thinking of roasting it, slow(ish).

Safe/not safe?

i wouldn't.

bit if you absolutely have to do this, then cook it with metal skewers jammed through the thickest bits of the thigh and breast. which cook it from the inside as well as from the outside. meat will be a bit dryer, but far less likely to kill you. and don't stuff it.

which means you will have a much nicer bird if yoiu wait and do it properly tomorrow.

if you don't have metal skewers, then really, really fucking don't.

unless you've got some nice shit I can have when you die.

in which case, it's all good

Due to being fairly disorganised at forward planning I've cooked several chickens from frozen over the years. PROVIDED it gets thoroughly cooked (ie juices run clear and not bloody / pink), I've been lucky enough not have had a problem.
To me, the idea of leaving a chicken to defrost means the outer layers have been warm for long enough for bacteria to multiply but cooking gets the bugs first.

I cook chicken breast from almost frozen for stir fries. You can slice it really thin whilst it's still thoring.

Chicken on the bone needs defrosting properly.

This is my issue! If I leave it to defrost, it'll take ages, and it was already close to the BB date before I froze it. I could stick it in the fridge but it'd take 24 hours to defrost, or leave it out and it should be quicker, but significantly more bacteria-ey.

Anyway, I didn't cook it last night and I forgot to remove it from the freezer again today. I guess my death is on hold

It's absolutely fine and safe to cook it from frozen AS LONG AS it's thoroughly cooked through. I have a temp probe for meat. They are really cheap and really useful. Food should be cooked to 63 degrees c or above.

I've worked in the catering industry for years and have my health and hygiene certs...

Can I suggest the following
  • When you get home later today, take it out of the freezer and put it in the fridge
  • By tomorrow evening it will be ready to cook by whatever method you choose
  • Next time, buy some turkey twizlers* which can be cooked straight from frozen and avoid the difficult issue of forward planning
* other poultry based frozen products are available

Anyone who says it's not safe to cook chicken pieces from frozen is trolling.

Any meat can be safely cooked from frozen if it's placed in boiling water for long enough. For chicken pieces this isn't long at all, just take one out and cut it in half if your not sure if it's ready yet. You can make the chicken more tender by using near-boiling water for longer.
