Chicken Casserole

think i'm gonna have dumplings like soj suggests and i'm gonna make it spicy like pips. how many scotch bonnets should i use for an 8 pieces-of-chicken casserole?
 
What price a flaming ringpiece?

I'd say 2, but that'd be towards the blimey level of hot. One if you're not sure, seeds if you like heat.
 
I would suggest two deseeded. A lot of South American food isn't that hot, but you still need the flavour of the scotch bonnets.
 
Nice recipe by the way Pip. It's looking tempting especially now I've just remembered the formerly green plantains I bought last week. Guess I failed on my 'must make plantain chips' mission then.

Seeding chillis is something I can rarely bring myself to do, but the flavour of scotch bonnets is worth a little effort and are worried about the heat.
 
Ach, what's not to love about chicken stewy bonnet goodness. Looks grand. And with the plantains in the house and a fresh bag of thyme straight from Guyana (honestly these folks love their strong thyme) it's sounding tempting and achievable with little effort

I'm guessing that it's better to buy maize flour from a latin american stockist rather than the african market stalls around here. Any preferred place?

You could try that shop in the covered market with a little entrace by the main market (there's cheap peppers outside all the time) but I get it from Costcutter next to Stockwell Station. In fact Stockwell (or better yet Elephant) is probably a better bet than Brixton.

Actually come to think of it I'm sure the Colombian butchers/store/snack bar on the site of the old KwikSave has that brand. Better pick up an empanada and some crispy pork skin on the way back too. Plan
