Cheesecake advice....

Well the recipe says double cream so I would imagine thats what she means :p

I'm sure a teeny drop of rum won't hurt but you might need to watch the consistency if you're pouring it in!

Actually, I thought I might try my lemon cheesecake recipe but leaving out the lemon and using Baileys instead - I reckon that might be a winner :cool:
 
I missed the 'double' and just read cream :rolleyes: :D

Not making it til the weekend or maybe Tuesday - but I'll report back.

Have used a bit of rum in banoffee pie before - went down quite well.
 
Cheese cake! Quite the authority me!!! Malteser base and lots of. Crush in bag and line tin base. Own brand cream cheese mixed with double cream. Whip by hand until smooth, if you like it thick more chees than cream. The science bit. Mango juice, from a fresh mango. Only use one side of the mango for juice the other for decoration on top. Bang iin the fridge forget all about it till your ready to serve. Leave at least 2 hours. Ta da:cool:

Nope am going for the malteser one....gonna have a crack tonight as I wait to ferry the lady around....christ how my life has changed;) Making cheesecakes on a Friday night....might catch up with a spot of crochet:rolleyes:
 
I've made aqua's recipe and included raspberries... stirred in and on top :o (forgot about the rum though - next time ;))

Taste test is this afternoon :cool:

I'm very excited about this, I'm trying it myself today. Have just made the base which was great fun - I'd never made a biscuit crumbly base before. Have to go mascarpone hunting though.

I can't see how it could turn out anything but completely delicious if you look at the ingredients list! My lucky lucky workmates who'll get a surprise mundane monday insanely rich squishy raspberry cheesecake!
 
Halp!!

Biddly's version of Aqua's cheesecake looked divine. (On May's yummy pastry thread)

Im going to make one tonight, but the calorific total scares the heck out of me is just :eek: Is there anything I can substitute for the double cream and/or mascapone?

Should I just find a less butt-inflating recipe?
 
Just don't eat it all ;)

(if it's scaring you, then go for a swim tomorrow, or a run, or cycle - even it out :))

Eh? Just make it the way it is - you're not gonna gain 18kg and go up 2 dress sizes just by making this cake. Chillax.

If my version looks anything like yours did, there is no way its lasting an evening at my house!

How many did yours feed?

I used low-fat cream cheese (only because the shop didn't have any full-fat) and less than half the amount of white chocolate (because it seemed a bit overkill to me - I don't like things toooo sweet!) and it was still very nice, although more chocolate would have probably made it set a bit better.

Or, as SZC says, just go for it! :D

Ive just made it!

Used double cream, full fat cream cheese AND the mascapone!
My bottle went though and used only a bar and a half of the white chocolate (150g) because it was so very sweet.

I added big fat raspberries like Biddly! It is now in the fridge!
I used the remainder of the raspberries to mop up the dregs of the chocolate cheese mixture from the bowl! :)



There's only gonna be two of us eating it! :D Will it freeze?
 
Dunno about freezing?

I made it on a sunday and it kept in the fridge till wednesday - then it was gone! I had to take it to work though and feed to hungry colleagues - two of us wouldn't have managed it (but then again: as I said on another thread I used an 11inch tin and therefore twice the amount of ingredients!!).
 
why do you people not want to try it as is? Its not like you are eating it everyday :confused:

its a treat and as such you should just enjoy it rather than beat yourselves up about it :)

I won't post things again if all I'm going to get is people having a go cos the calories are high

Not sure if you are being entirely serious. Im sorry- didnt mean to hurt your feelings!
I joined in the cheesecake fun in the end! It was delicious with raspberries. Im very proud of it and I got lots of kisses, so thank you for the recipe!
 
Oh Aqua, following on from Mays thread, and Biddlys inspiration I made it, pics on other thread.

It was totally dreamy, dish delish and my daughter had two (small) portions! I had one and so did my friend and we agreed it was amazing.

I sent her off with the remainder to give to her breast feeding niece. Otherwise I would have done a Nigella and nipped to the fridge at stupid o clock and eaten more and more til I was sick!

We decided that raisins soaked in rum would make a good alternative to the raspberries too!
 
i plan to make this tmw :) so long as i can find a suitable tin, or find a good way to improvise
