Cheap, comforting soup recipes

glad you liked it! it was my granny's soup (with carrots and leeks from the garden) and I still have fond memories of it.

the trick (and you've obviously found it) is to find the right combination between the bulkiness of the spuds, the sweetness of carrots and the bitterness of leeks.
 
I made last night (in a bid to eat more healthily) a lush soup

fry leek in however little or much oil/butter you want till soft

add one roughly chopped butternut squash till all niely coated in pan stuff

add some black pepper and some cumin

fry for a bit till all nice

add stock (I used marigolds veg bouillon cos I'm lazy like that :D) till it just about covers the squash and leave to simmer till all soft and sweet and lovely

zap with handheld food processor

fucking gorgeous it is :D

if you're still feeling poorly, indian lentil soup is lovely- well, i say indian, but i make it up as i go along so it's not exactly authentic! but lush.

chop one or two onions. sweat them in butter or brown them if you prefer the taste. add garlic, minced ginger, dried chillies, turmeric, cumin seeds and a couple of green cardamom pods, and fry them a little to release the flavour. stir in some red lentils and let them absorb some of the spices. then add stock- chicken is nicest. you might need to add more as the lentils cook. eat with heavily buttered bread, natch. sometimes i add yoghurt at the end, but it's a matter of personal taste. (you could put fresh coriander on top too but i'm always too disorganised to have any)

proper warming, and the chillies should help to flush out your sinuses too.
