Carrot recipes?

carrot & butterbean soup

Any more details on that?

yummy soup!

1 tablespoon of sunflower oil
1 onion, chopped
4 cloves of garlic, chopped ( i usually use more if its just for me, but 4 is about enough for my kids tastes)
about 8 large to medium carrots, scraped and cut up into chunks
1 400g tin of cooked butter beans
2 pints/4 cups/1200ml of water approx ( sometimes i use half water, half veg or chicken stock , but its just as nice with just water)
a little seasalt as desired

Instructions:

Fry the onion and garlic in the oil for a few minutes and then add the carrot and stir well. Add water and bring to the boil - turn down to simmer and cook for about 15 minutes until the carrot is cooked through. Add the beans and cook for a further 5 minutes or so until they are properly heated through. Season and liquidise if desired.


sometimes i will add spices or chilli as well, just for a bit of variety
 
I've grown a fair few carrots, and now I don't know what to do with them.

Veggie stew, and carrot and coriander soup is all I've come up with. Have looked a few up but not much is tickling my fancy.

What's your favourite carrot recipe?

And mildly hallucinogenic, but not as much as blackberry wine which gave me some of my most interesting experiences of 1989/90
 
Just grate them and shove some balsamic vinegar in, and eat them. Nom!

Or just wash them and eat them!

Or, roast them, with or without honey

Or, boil in just a little water, with a knob of butter and a spoonful of sugar, until they caramelise

Or, cut them into stick sizes and dip them in humous or other dips

cheers feyr! I don't think I'd liquidise, I like chunky beans

I haven't got any gubbins to contain wine unfortunately, and I don't think I'd have enough carrots, but ta anyway

But Guin, I know I could eat them raw - I wanted people's favourite recipes. The caramelising thing sounds interesting.
