Obviously, I have found LOADS of recipes on the net, but this one needs to be good

and fool-proof, I am no Delia in the kitchen :o

Please share your scrummiest carrot cake recipes with me
 
If you want the really easy way, Wrights Flour make a Carrot Cake mix which only needs water and oil, and it's surprisingly good. A woman at work used it and brought it in, and I thought she'd slaved over a hot carrot for hours.
 
just get a sponge and stick carrots in the top as my clueless housemate tried once...delicious:confused:
 
I made the Ultimate Carrot Cake off the Delia website at the weekend. The cake was nice, but I wasn't mad about the icing.

Is it the one with the mascarpone / fromage frais topping? I like that one! (bloody expensive though)

It is. I prefer the sweeter, thicker icing you normally get on carrot cake. It was a bit too much like whipped cream for my taste.

NB there is also a carrot cake recipe on the suburban wiki.
 
ooh, Im getting excited about this cake :cool:

Think I will give the Delia carrot cake a shot, but make it with the lemon icing from May Kasahara's recipe instead. YUMMY :)

Will let you know how it turns out :)
