Burger recipe

ordinarily i would keep it simple

but i have been itching to try this for years


ISICIA OMENTATA (a kind of Roman Burgers)
Ingredients:------------500g minced meat1 french roll, soaked in white wine1/2 tsp freshly ground pepper50ml Liquamen (can be replaced by 1/2 tsp salt + a little white wine)some stone-pine kernels and green peppercornsa little CaroenumBaking foilInstructions:-------------Mix minced meat with the soaked french roll. Ground spices and mix intothe meat. Form small burgers and put pine kernels and peppercorns intothem. Put them into baking foil and grill them together with Caroenum.
 
Mince, salt and lots of pepper. All else is mere frippery. Keep the condiments to a minimal too - just ketchup and cheese
 
I use this one....it's piss easy and tastes fab.

Serves 2

200g lean beef mince
1 Tbsp soy sauce
1 tsp worcestershire sauce
1 Tbsp chopped fresh coriander
1/4 red onion, finely chopped
1/2 and egg, beaten
1/2 tsp salt
1/2 tsp black pepper

Just mix it all together, form in to 2 or 4 burgers (up to you), pop them in the fridge for a short while to firm up (if you have time - don't worry if not) and grill. Lovely. :cool:

Bun, mayo, shredded lettuce, burger, cheese, ketchup, bun. :cool:


And possibly some fried onions and a couple of very thin slices of tomato too, if you can fit it all in! :p
 
Nooooo! Lettuce is just wrong in a warm burger - warm soggy lettuce is horrible - anything but cheese and ketchup just distracts you from the the meat
 
I asked the chef what was in their burgers in Lucky Seven in westbourne grove, who do a great burger and according to him its just:

good mince
tiny tiny bit of onion
butter
a little salt & pepper


anyone else heard of putting butter in? I've tried the recipe a few times but always seem to have too much onion, no matter how little i use...

I occasionally brush my burger with garlic butter. And I *heart* steak with a knob of butter chucked in towards the end.
 
You're all barbarians! You don't want to mess with beef. It tastes SO good. Sure, add stuff later if you want. Fillet and horseradish or mustard is lush, but cook it with just pepper and salt.

Quite right, avoids the harshness of raw onions/shallots. Season well and that's all you need. A splash of Lea and Perrins if you really can't resist messing around, but that's the limit.
 
Well, I went for mince, loads of salt and pepper, grated red onion, a bit of paprika, crushed garlic, and a bit of dried parsley. Shaped them into patties. No egg, no breadcrumbs, and they were lush :o :D
