Pigeonhed - Salome (off their self-titled debut). Brilliantly, spookily evocative.

Or if you want something more straight-up beautiful, Her (off same album) is just gorgeous :)

Brian Eno's Apollo album works well for me when I'm in that mood:

Good Call - I would also recommend another album of his; "Ambient 4:On Land". An album that is both very intimate, and yet impossible to fathom. Still sounds incredible 25 years after it came out.

Another couple of gems worth investigating would be "Alchemy" and "Gone to Earth" by David Sylvian

For a bit of a giggle, you could check out some of the Rockabye Baby collections, featuring lullaby renditions of songs by The Cure, ACDC, Beatles, Bob Marley, Metallica and many others. Many of the versions are pretty bland plinky-plonky stuff, but some tracks are quite touching.
 
Almost any Harold Budd! I particularly like The White Arcades, The Avalon Sutra and The Pearl.

Oh yes, been trying to remember... finally got there. Stars of the Lids' erstwhile lable mates Pan American. Their 'Quite City' CD has a really nice intimate late night/early hours of the morning feel to it.
