Blue Cheese

I like a lot of blue cheeses, but I do find that a little Stilton does go a very long way.

There are good reasons for eating blue cheese - some research appears to suggest that it can be quite beneficial for the gut biome, what with having all those bacteria in it.
 
It sounds like you don’t like blue cheese. It’s not compulsory to like it.

I want to though. It'd be terrible if there were some blue cheeses out there I might really like yet never discover, due to assuming they all have the same blue cheese taste as the blue cheeses I've tried and didn't like.

OK, well go for a really mild one like dolcelatte or Gorgonzola dolce (not picante), and pair it with fruit - peaches are good - and port. Like killerb said.
 
Blue cheese is pretty much unknown here aside from a couple of big metro supermarkets in the tourist areas . It’s one of those things that you take for granted unless you are thinking of cooking certain recipes or lying on the settee thinking I wouldn’t mind a bit if that .

You're not going to find one you like.

Blue cheese is shit. It's full of mould. If I wanted to eat mouldy cheese I'd leave some cheddar in the fridge for a few months, and instead of throwing it in the bin I'd eat it, like a filthy depraved animal.

I mean, cheese itself is a pretty grim concept if you're that squeamish. Its basically milk left to curdle and go hard. They get milk from a cow's boob too, eurgh.

It's fucking brilliant, isn't it? I've just hacked into a big lump of gorgonzola that's been stinking out the fridge for a few days... mmmmmm mmmmmmhh!

I love any kind of blue cheese, stilton is bloody gorgeous too!

Be sure to take it out of the fridge a good few hours before you intend to eat it. I leave it out covered overnight if possible. It’s a mistake to eat it straight from the fridge as it needs to get to room temperature to enjoy at it’s best.
 
Blue cheese lovers and haters alike should try Montagnolo Affine, if you haven’t already. It sounds Italian but is actually German, from Bavaria, and has a delicious mild, creamy, sweetness with a good hint of blue. Be warned, once started it’s quite easy to get carried away and bash through the whole lump. Quite possibly my favourite cheese. Sainsbury’s sell it.
