Bland casserole :(

Herbs are a must: for a casserole with seasonal veggies like that I'd use thyme, rosemary, a bay leaf and maybe some oregano to pep it up.

Harissa can liven a dull casserole or stew up no end as well. :cool:
 
:eek: I had a bowl last night... but with the addition of salt, pepper, paprika and a tiny bit of tom puree it did taste better... but I think you're right about the meat aqua.

The last portion has been frozen :)
 
This makes a delicious creamy sweet tasting veggie casserole without the need for salt and various flavourings. Make a big batch and freeze. It is truly yummy :)

Dice and fry 2 red onions over a low heat.

Chuck onions in a casserole dish.

Chop up a variety of veggies (I usually do medium chunks as opposed to small as it cooks for a while). I use:

2 large carrots
2 courgettes
1 large parsnip
sweet potato
some baby new potatoes chopped in half
couple of slices diced aubergine
anything else you fancy chucking in

Add to the casserole dish and cover with vegetable stock.

Add 2-3 tins of niblets original sweetcorn

stir in a tin of campbells condensed mushroom soup

Cook on 150ish for 2-3 hours or until veggies are cooked.

It's blummin luvvly. :)
