Best Vegetarian Recipes?

Depends on how simple you want to keep it and how far you want to look. Most Italian could be simple and veggie. Homity Pie, not brilliantly nutricious but simple and goes down well.
350 g of spuds, cooked n cubed. 450g of onions, chopped, few cloves of garlic fried until soft. 100g grated cheese. Blind bake pastry, mix onions and spuds, add drop of milk, small knob of butter some of the cheese and throw into pastry. Sprinkle remainer of cheese on top, sprinkle with parsley and bake at 220 for 20 minutes. Theres plenty of ways to vary this.

The onions one is literally onions, rocket and goats cheese :D
Silly me. i love the idea of a salad with just onions, rocket and goats cheese so got a bit excited.

Although a bit of roast pumpkin might go well too. Mmmmmm
 
Lazy veggie pasta bake
For two:
you need a couple of round enamel pie dishes for the best effect, they don't cost much - get the ones that are the size of large side plates.
Take a packet of stuffed pasta - the ricotta/spinach tortellini type is ok and divide the pieces between the dishes.
Large bottle of passata (or pasta sauce in a jar - we don't like added sugar or salt so we go for the former), pour over the stuffed pasta so its just covered.
Thinly slice a courgette and place over top of each dish so the passata/pasta is completely covered.
Thinly slice a few tomatoes and place over the top.
Stick in oven on gas four, middle shelf 30 minutes.
Remove from oven, slice up a whole mozarella ball for each person, layer over dish and bung back in oven 15 -20 minutes until the cheese is melted and starting to brown.
I sometimes add mushrooms, or layer spinach leaves on the bottom of the pie dish, you could slice any veg that likes to be chargrilled ontop of the pasta.
Serve as it is, in the pie dish.
 
mushrooms + pasta

Boil up some pasta.

Fry some garlic and mushrooms in butter. Season. Add some cream and water to give a runny consistency to your liking. Add a pinch of cayenne pepper and a sprinkling of parmesan. Mix all this into the drained pasta. Add more cream/water to get a sauce consistency you like. Add a bit of chopped parsley, serve, and maybe add some more parmesan.

One of the easiest and best veggie meals. (I like it with some salad or some greens.)
