Best omelet fillings?

A mixture of feta, yoghurt, paprika,spinach, tomatoes and fennel seeds. Works really well with a omlette with potato chunks in it. Mmm!
 
Potato curry. Like a sort of eggy masala dosa. Bit of fresh coriander. Some sort of indian chutney or pickle on the side. Lush.
 
My mum and dad really like masala omeletes. I think they're rank though.

Smoked salmon omelettes are pretty tasty, but there are so many better things to do with smoked salmon. Chorizo, potato and onion is pretty good. My all-time favourite is onion, bacon, potato and gruyere.

a proper spanish omelette is very filling and absolutely delicious. make it very garlicky and enjoy with a glass of wine. by proper, I mean the real stuff, not what they serve in south london cafes, which are just glorified cheese, ham, and mushroom omelettes. I would also imagine thet red peppers could make a good filling along with some garlic.

well, Mrs. M...its probably an omelete with indian spices in it like red chile powder, cumin, garam masala, salt, black pepper, etc....they also put lots of onions and sometimes fresh cilantro in it. yea, and its usually fried in lots of oil so that its very fluffy and moist. :)

my mum used to make it sometimes.

that sounds good. just a point about linguistics, cilantro is called coriander in britain, just to avoid confusion and help comprehension.

yea, over here cilantro is the fresh herb and coriander is the dried seeds/powder :p

I see....I make scrambled eggs like that and it's fuckin lush.

Indeed. Homemade chips are increasingly rare and underrated.
