Serenity - River Tam bar scene. Awesome for both choreography, and for the way it reveals that this timid, scared character is actually a dangerously unhinged unbelievably skilled warrior.

I like the ones where they are just throwing each other through suspiciousy flims bartops and so on, reeling out in the street and knocking seven dozen bells out of each other.

Clint Eastwood springs to mind. Can't find a youtube clip, but the pool hall ambush scene in Coogan's Bluff is a good example of Clint at his brawling best.

Tony Jaa in Warrior King restaurant scene. A single shot sequence that lasts nearly 4 minutes (steadicam from 20s to "Where are my elephants!" :D :
