Best cheese?

there is no way i am picking just one, it would be like a captain having to pick one troop to save from a loyal battalion at the end of a long and bloody campaign
 
Got some Epoisse in the fridge at the moment, which is definately the smelliest cheese I've come accross. Probably not the best though, I reckon that would have to be Dolcelatte or Roquefort.
 
ossau iraty is well worth a mention, as are many other basque cheeses. stilton can be great but like cheddar there's too much cheap rubbish- unpasteurised is most definitely the way forward.

a poll of "the best cheese ever" would be foolish and be an over simplification of one the most complex foods existing. there is a cheese to suit every moment and most cheeses fit at some point.

except for smoked cheeses or processed cheeses- to the naughty corner anyone who suggested them. :p

I like a good old fashioned strong cheddar. That'll suit me fine thank you.

Occasionally brie if I'm feeling posh.
 
my dad picked up an unpasteurised stilton from neals yard when he was in london last week (they have to call it sticheltchon for some, presumably legal, reason, but it's made to the exact same recipe as stilton).

it's the fittest blue cheese i've ever eaten. get some. :)

My favourite is similar to the Leiden with the cumin seeds, except this one has toasted mustard seeds in it (as far as I know it's just called mosterdkaas), it's nutty and creamy and the mustard seeds pop when you bite it. Going to stock up when I go to Holland :D

I found a good aged gouda (with crystally bits) in a cheese shop in Cambridge last summer. It was insanely expensive though.
Also got an amazing blue goat-cheese from a stall in the market square. Looking forward to getting some more while I'm working there this summer.
 
Ever had stilton ice cream? The only truly hilarious food I've ever eaten. Nothing else's made me laugh when eaten.

Ice-cold, creamy, gorgeous texture melting around every corner of your mouth... Then.... Exhale... And just get a rocketing blast of overwhelming, resounding, all-consuming cheese.

Surreal.

I had a warm cheese fondant once. It was part of a tasting menu, they served it as a cheese course. It looked like chocolate fondant, but it was cheese! Came with a drizzle of balsamic reduction, a leaf of some sort, and a perfectly toasted and spiced pecan. I have never had such a good dish in my life.

I also once had an asiago cheese that had been aged in port. It was one of the best cheeses I've ever had. I had it at a restaurant but it apparently came from Le Fromagerie. I should go try to track it down.
 
Fried halloumi FTW. I thought this was settled in a 'King of Cheeses' thread some time ago? :mad:

(but yes, it's true, pretty much all cheese is good, and personal tastes vary, so one person's top cheese will be another's idea of rotting lactose hell.)

Ossau Iraty ain't bad either - a Basque sort of gruyere/manchego hybrid - get pretty stinky if treated right as well.
 
With only twelve options? Pah.

There are only two possibilities: one option; or a bazillion. Twelve is neither of these.

We could do a poll by cheese type?

i.e. Hard full fat (e.g. Cheddar)
Brie/Camembert type
Sheeps Cheese
Goat's cheese
Blue cheese
Smoked cheese
Gruyere/Jarlsberg tyoe option
Crumbly Curd type (e.g. Cheshire)
Cottage Cheese
Human Cheese
Other obscure regional variety etc.

Probably won't satisfy everyone though ;)
 
Went to a rock festival in Switzerland a couple of years back and not wanting to pay festival prices for food we brought a big wheel of camembert and a loaf of bread in with us. We completely forgot about the cheese until about 9pm, by which point it had been in someone's rucksack in 30 degree heat all day. That was the best cheese ever, gooey sweaty camembert smothered over chunks of bread. Mmmmmm :)
