Beetroot recipes please

I seem to remember reading a recipe for a low fat chocolate fudge cake whose main ingredient was beetroot. Never been brave enough to try it out though.

I saw a very moist and fudgey looking chocolate cake, that was made with beetroot, reduced in Sainsburys the other day.



I would have bought it had it not been for the betroot.



(I LIKE betroot tbf, but I couldn't quite get my head round it as a cake ingredient.... )

I do. It took me a couple of goes though, in a Georgian restaurant in Islington, but I got there in the end.

Roasting is by far the best way to cook it imo. Either with loads of other root veg and rosemary and thyme or on it's own with a bit of balsamic vinegar.

Ah shit, sorry. I forgot all about this thread. I'm afriad I don't have a recipe as I've only ever tasted it made by someone else (The Yorkshire Soup Company, I think the name was), but I figured it couldn't be too hard to make?

I made beetroot risotto once - grated the beetroot in. It was pretty good. Quite surprising in colour.

I was cooked that the other day - it had vodka in it too - it was well yummy - and well PINK
