I haven't made any of these but they look good.
Banana Liqueur
Yield: 1 quart
2 medium Bananas
1 teaspoon Vanilla extract
3 c Vodka
1 c Sugar Syrup
The tastiest bananas will have a bright yellow peel and no discolored areas which indicate a bruise. Never refrigerate bananas. Mash peeled bananas and add to vodka, cooled sugar syrup, and vanilla extract.
Shake gently and let sit one week. Strain and filter. Let sit longer for additional flavoring, but may be used now. Experiment with cinnamon or nutmeg.
Banana-Stuffed French Toast
1 cup mashed banana
1/2 teaspoon lemon juice
4 (1-inch thick) slices Italian bread
1 cup skim milk
2 tablespoons brown sugar
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
4 large egg whites
2 teaspoons margarine, divided
1/2 cup maple syrup
1. Combine banana and lemon juice in a small bowl. Stir well; set
aside.
2. Cut bread slices in half crosswise; cut a slit through cut sides of
each piece of bread to form a pocket. Stuff 2 tablespoons banana mixture
into pocket of each piece of bread.
3. Combine milk and next 6 ingredients (milk through eggs) in a large
shallow dish, and stir well with a whisk. Arrange stuffed bread pieces
in a single layer in dish, turning to coat. Cover and chill 45 minutes
or until milk mixture is absorbed, turning bread pieces over after 20
minutes.
4. Melt 1 teaspoon margarine in a large nonstick skillet over medium
heat; add half of bread pieces. Cook 4 minutes. Carefully turn bread
over; cook 3 minutes or until browned. Repeat procedure with remaining
margarine and bread pieces. Serve with maple syrup. Yield: 4 servings
(serving size: 2 bread pieces and 2 tablespoons maple syrup).

This South African recipe for Banana Chutney is easy to prepare and the resultant chutney is well worth the slight effort required.
RECIPE INGREDIENTS
30 bananas
3 cups brown vinegar
2 cups brown sugar
1 cup seedless raisins
2 red chilies
1 onion (medium)
2 tbsp ground ginger
1 tbsp salt
METHOD
Peel the onion and chop finely.
Remove the seeds from the chilies and chop finely.
Peel and slice the bananas, about ¼ inch (1/2cm) rounds.
Combine all the ingredients and simmer in a stainless steel or enamel saucepan for 2 hours, until the mixture reaches the desired consistency.
Bottle and seal whilst the Banana Chutney mixture is still hot.
Banana chutney has an unusual flavor and is a great accompaniment for light curries and bredies.
