baking with kids

Brandy snaps are another brill thing for baking with kids

Wow! I've just had a Proustian Madeleine moment - I remember my mum taking us to Kirkgate Market in Leeds when I was little and we'd be rewarded with brandy snaps from the sweet stall there at the end of every trip.

Theres loads of hydrogenated nonsense in those things though.
I want to to it properly

I can see you are withholding the recipes though:hmm: I will consult google ;)

Oh and the cakes look great! I can never eat those silver things though, I'll have one with the hundreds and thousands thanks :)

sorry, i don't really do recipies anymore for basic cakes, unless i want a very specific texture and taste. I just dollop it in and add a bit more if the texture isn't right.

ok then,

4oz caster sugar
4oz butter
4oz self raising flour
2 eggs
teaspoon of vanila essence

cream together butter and sugar
beat in eggs, with a tablespoon of the flour
stir vanilla essence
fold in flour
divide into 12 cake cases
stick in oven at about 180, for 20 mins or so
cool then eat (or decorate and eat)

I loved cooking as a kid and my daughter loves cooking, she even has a cooking blog:)
I the worst thing i think I ever saw kids cooking wise was the mum who wouldnt let her kids lick the spoon in case they got salmonella...
She wouldnt let me eat raw cookie dough either... wheres the fun eh?

Recipe please? I love them and couldn't get any at christmas.:(

Ingredients

50g (2 oz) margarine
2 tablespoons golden syrup
50g (2 oz) golden granulated sugar
50g (2 oz) plain flour
1/2 tsp ground ginger
1 tsp brandy

Instructions

1) Put the margarine, golden syrup and sugar in a pan and heat gently for a few minutes until bubbling.
2) Add the flour and ginger, then stir in the brandy.
3) Line a baking tray with non-stick baking parchment and dollop a tablespoonful of mixture in the middle. Spread it out to form a circle.
4) Bake for 7 minutes at 200ºC/400ºF until dark golden brown.
5) Leave to cool on the tray for a minute, then remove as soon as you are able and drape the brandy snap over a small dish/ramekin/upturned muffin tin. Press gently into shape.
6) Repeat the process with the other brandy snaps. Store them in an airtight box until you are ready to use them.

Or you can make smaller ones and wind them around the handle of a wooden spoon to make the cylindrical snaps. If the brandy snaps have got too cool to wind/drape you can just pop them back in the oven to get warm enough to work with again. Leave quite a bit of space between the dollops cos they spread out a lot when cooking.
