Baked Potatoes - What's On Yours?

I've recently discovered that baking sweet potatoes beats regular potatoes hands down. Leave them in the oven for ages and the middle goes soooooo gooey and nice.

Cut them open and mash a load of butter and salt and pepper into them, then some hommous and strong cheese of choice (I'm currently ina red leicester phase), OH BABY that's the shit.

Mmmm it's nearly breakfast time...

Cheese and Beans with lots of butter and black pepper :p

The other thing I like to do is get a cooked baked potato, cut it in half and hollow out all the centre. Then put the skins back in the oven to crisp up for 5 minutes or so.

Then whisk up the insides with butter, cheese, chopped up grilled bacon, black pepper and some tomato puree. Then take the skins out and fill them back up.

Serve with sour cream
 
I don't eat cheese or meat, but I do eat jacket potatoes quite often.

I usually eat them with ratatouille/veggie stew and sweetcorn and lots of salad.
