because the act of changing history is not instant. as we saw in the first film, Marty's family faded away before marty started to fade too, rather than just ceasing to exist instantly. I suspect that when 'old biff' went back in time to change history, the point in time he went back to and his present time ran concurrently so that the future wasn't changed until some time after 'young biff' first received the book. maybe
