Yum. Avocado. I like it a lot on toast, with lemon/lime and salt.
Pru Leith has an avocado soup which is very rich.
Grapefruit, avocado and chilli salad is very tasty. The sharp citrus balances the grassy, fatty avocado.

I saw a recipe for avocado with rum and brown sugar in a pancake. This is on my list of things to make especially as pancake day is on its way. Also vegans and raw food fans use it a lot in puddings with cocoa and other bits and pieces but I've yet to try using it this way.
 
I'm just making a gorgeous pasta sauce with it. For one, fry half a chili and 3 chopped spring onions for a few minutes, add chopped clove of garlic for one minute, then about half a tin of tomatoes, and cook for 10 mins to reduce the tomato a bit.

Cook your pasta meanwhile, and when that and sauce is done, add sauce to pasta, top with one small, diced avocado, a handful of chopped fresh coriander and a squeeze of lime. Lush.

They are flavoured soya.

Not anything fancy like, just like the ones you get at a Harvester on the salad cart.
 
ripe avocado, squished, squeeze of lemon juice, lots of grated cheddar and some Hellmans to make a smoothish dip, mix well, add fresh herbs (mint,. coriander, parsley) but only if inclined. Leave for an hour before consuming at pace, in silence, with crudités or Doritos.
 
Don't 'cook' it.

Slice it and eat it, or put it in a ham or bacon sandwich.
I added avocado to some salmon maki sushi I made yesterday. Avocado and Salmon are lovely together.
 
Fried halloumi is pretty bacon-y.

Considerably nicer than soy-based bacon substitute or reconstituted turkey I suspect... :hmm:

It works well with fish too, perhaps sardines and avocado on toast.

Although I have to add the caveat that I think avocados are fucking vile, due to having a texture inconsistent with their taste. One of very few things I don't like. It's been a few years since I last tried though, probably time to give them a chance again.

That reminds me that somewhere I've got a recipe for the most amazing fucking herb dip... think I know which book it is, must find it. I think I spent most of last Passover covering matzo in the stuff.
 
you can cut it in half, take the pit out, crack an egg in it and bake it in the oven. Never tried it but I've heard it's really good.
Personally I would just make lotsa guacamole :D

If someone put a forkful in front of me I would try it (I'll try most things once or twice) but I cannot get my head around the idea of cooked avocados so would never order or cook them myself.
In fact I have never seen cooked ones on a menu anywhere.

I think I've had it cooked, can't remember why...maybe on pizza or something? anyway I remember it tasting like avocado, but without as much of a bite/ sharpness to it.
