Arancini filling ideas

    Today I made arancini for the first time. Turns out it's pretty easy to do, so now it's my favourite thing in the world. I'm going to arancini-ise everything.

    Give me ideas of what to put in them, thanks.

    I reckon your top 3 are, Norma, crab, ragu and buffalo balls. If you make ragu you can have it with spaghetti the next day.

    The ones I made today were cheese.

    Double cheese, I guess. Parmesan in the rissotto mixture, and then buffalo mozarella as the filling.

    Deep fried rice balls.

    The rice bit is basically rissotto, then you make a ball of it, with something in the middle (like cheese), then coat it in breadcrumbs and deep fry it.

    Bit like a continental scotch egg. Very tasty.

    Mm I am going to have to find some of this stuff. Could spicy mincemeat work? Cheritzo and anchovies? Halloumi and diced tomato?

    I was thinking you could make these with israeli cous cous, too, and they'd be ace. It's tasty, sticky and easy to make compared to rissotto.

    Chicken livers.
    Dab of Bolognese / mince / leftover roast.
    Mushrooms (sliced, fried/reduced).

    I am on the Dutch breakfast so think that making an arancini stuffed with a smaller arancini is a great idea. ;)

    Also, because of this thread I dreamt about buying arancini from a stationary food van in Poland/Brighton. :D

    There's an Italian cafe near me that does amazing nduja (spicy sausage) arancini, and also serves chinotto. I really want to go now!

    Italian myrtle orange fizzy drink. Kind of non alcoholic Campari. It's bitterer than most fizzy pop, I think it's absolutely delicious.

    I Googled and saw a drink but assumed you meant another food! Anyway, cheers :)
    Not a bad shout, actually. A bit of pork, some cheese, you've already got the breaded coating. Only thing missing is bechemel, and some recipes for arancini use bechemel in the rice mixture :cool:

    There is a Sicilian recipe with pistachios and cheese - not mozzarella but a mixture of parmesan and caciocavallo, which is similar to provolone. Sounds lovely.

    I guess you've considered mushrooms, OP....? Also, it could be nice to make them from risottos that aren't plain, eg a saffron risotto or something that's not too lumpy.

    Yep, I originally planned to make mushroom ones for my first attempt, but my mushrooms were all manky when I got them out of the fridge and didin't have time to go to the shop, so just did mozerella. Mushrooms definitely going to be attempted at some point :)
