101 things to do with a dead panettone

Found this forgotten Xmas present in a cupboard. It had a Best Before date of end June, but still looks/smells ok if a little drier than it once was.

So half of it will be going into a vaguely trifle-like dessert conflation from three recipes for the weekend - soaked with Amaretto in the fridge for a day, then covered with a layer of orange pieces in jelly and finally covered with mascarpone.

But that still left half of the bugger to get through.

Day 1 - A sprinkling of the Amaretto on top and a scoop of dairy ice cream was well received at Rabbie Towers (although the tasting panel managed to finish off the ice cream stock in the process :mad: ).

Day 2 - Pouring freshly brewed espresso from the Bialetti over the top was not regarded as a complete success - too soggy, and it probably needs a dollop of cream to offset the sharpness of the coffee.

So about a quarter of a panettone to go...


I'm supposed to be in "daily visit to Tooting lido" weight loss season; there isn't any cream or ice-cream in the house; and I'm not allowed to raid the mascarpone yet.

Any ideas before I put it outside for the crack squirrels to eat.:confused:
 
Leftover Panettone?
...turn it into "Antonio's French Toast"
6 eggs
1/2 cup milk
1 teaspoon vanilla
Cinnamon to taste

Whisk eggs in medium bowl.
Add remaining ingredients.
Dip slices of panettone into mixture to coat both sides well.
Cook slices on non-stick griddle until golden.

Serve plain, or with maple syrup, powdered sugar, or ice cream.
 
I was going to suggest trifle, which worked well for me. But you say you can't have cream and ice cream...

Make toast with it, it's pretty good.

Unsalted butter on it, and have it with a cup of proper coffee.
 
Thanks for the various cholesterol-laden suggestions - you're obviously trying to kill me off in the hope of getting a taste of the Rabbie Towers wine cellar at my wake :D
 
If you were that committed to losing weight, the Panettone would be in the garden for the birds :p
Try layering cubes of it in a sundae glass with greek yoghurt and fresh raspberries. :)
 
You could use it for a summer pudding, line a pudding basin with slices of it, then fill with blackcurrants, raspberries, redcurrants you have just lightly cooked with a little sugar so the juice runs, cover with remaining slices of pannetone, weight down and leave for 24 hrs in a cool place.

Serve with a generous dollop of cream for everyone else. You get to enjoy the full fruit intensity unadulterated and feel thinner and more virtuous for it.
